Sourdough Pancakes
These pancakes are packed with nutrients (especially if you add the mixed seeds and use whole flour) so they make a guilt free fun Weekend breakfast
You'll need:

130g Sourdough Starter

170g Milk

15g Olive Oil

2 large eggs

Pinch of salt

120g of flour (I like to use a mix of white wheat, whole wheat, whole rye, whole spelt)

25-50g of sugar

50g of mixed seeds such as chia, hemp, flax, poppy etc. (Optional)

1tsp of baking powder

1/2 tsp of baking soda
Method

Mix all ingredients together

There is the option to allow the mixture ferment overnight in the fridge, add the baking powder and baking soda in the morning if doing so (optional)

Leave rest for 30 minutes

Heat pan on medium heat (allow pan to get very hot)

One ladle of batter makes one pancake

Enjoy with your toppings of choice
